Apple bread smells like fall

I felt rejuvenated when I woke up last Wednesday, the first day of fall. It was 56 degrees outside at 6 a.m. when I took my dog out. Lately all I have wanted to eat were cold sandwiches and salads. After watering my outdoor plants almost daily after getting home from work in the heat, the last thing I want to do it to cook anything in the oven.

However, I can now start making my fall favorites including this delicious apple bread and fill my home with the smells of fall.

I’ve had this recipe for years and hope you enjoy it as much as I have.

 

Apple Bread

Ingredients

½ cup softened butter

1 cup sugar

2 eggs, beaten

1 cup peeled and finely chopped apples or coarsely ground (I use Honey Crisp)

1 tablespoon orange rind

2 cups flour

1 teaspoon baking soda

½ teaspoon salt

2 tablespoons buttermilk

1 teaspoon vanilla

½ cup pecans, chopped

Directions

Cream butter, sugar and eggs until fluffy.

Stir in apples and orange rind.

Sift dry ingredients and add alternately with buttermilk.

Stir in vanilla and pecans.

Bake in greased loaf pan at 350 for about 1 hour. Makes 1 loaf.
