Once again I am sharing one of my mom’s yummy recipes – Taco Chicken Wings.
She used to make this when I was in high school and it was always a special treat. They are a little messy but absolutely delicious! Chicken wings are usually more expensive than chicken legs and thighs, so over the years I have started making them with chicken thighs.
When I do, I double everything but the chicken. I like to serve them with mashed potatoes and a salad.
Taco Chicken Wings
Makes 32 pieces
½ cup flour
1 package taco seasoning mix
3 pounds chicken wings, tips removed and cut in half at joints
6 tablespoons melted butter
2 cups crushed Frito corn chips
Combine flour and taco seasoning mix in paper or plastic bag
Add 2 or 3 chicken pieces at a time.
Next dip in melted butter and roll in corn chips.
Put on shallow backing sheet with sides covered with foil or parchment paper.
Bake at 350 for 45 minutes.
